GENERAL MANAGER

The General Manger will work in tandem with the owner through the busy holiday season and help grow the business in the new year. Though the GM will primarily work on the sales floor (assisting customers, receiving orders, managing inventory, supervising staff, processing online orders), they will also learn the basics of cheesemongering so that they are able to support behind the cheese counter as needed.

Responsibilities will include, but may not be limited to:

  • Work the sales floor and register on a regular basis and behind the cheese counter as needed.
  • Train and develop staff, and lead them in the course of daily operations.
  • Manage inventory in POS system and webstore.
  • Monitor stock levels of supplies and product.
  • Communicate effectively with staff, customers, and vendors.
  • Demonstrate strong time management and effective planning skills across all aspects of the business.
  • Oversee cleanliness and sanitation procedures, including implementing daily/weekly/monthly sidework schedules.
  • Receive deliveries, ensuring that all received product is accounted for and saleable and properly stocked or stored.
  • Adhere to all food safety and labor guidelines and Department of Agriculture regulations.
  • Participate in monthly and annual inventories.
  • Perform other responsibilities as needed.

Job Requirements:

  • Minimum one year experience managing in a retail or customer-facing food service position.
  • Cash handling experience and basic math skills.
  • Excellent verbal and written communication skills.
  • Serve Safe certification required within first three months of employment.
  • Basic computer skills and experience with POS systems. Experience with Excel preferred.
  • Experience with artisan cheeses and meats, specialty grocery, and/or wine is highly preferred. An interest in and willingness to learn about these products in mandatory.
  • Use of knives and kitchen equipment such as meat slicers will be required. Experience as a cheesemonger or working in a professional kitchen is a plus.
  • Ability to stand for extended periods, walk, bend, talk, hear, listen, reach, grasp, taste, smell, perform repetitive motions and use hands to handle or feel objects.
  • Ability to push, pull, lift, carry, or otherwise move 10 - 25 lbs. regularly and up to 70 lbs. occasionally.

KITCHEN MANAGER


JOB DESCRIPTION 

The Kitchen Manager is responsible for the day-to-day operations of the food service program, including made to order items, prepared foods, and catering. Our ideal candidate will have managerial experience, including hiring and training new employees. Extensive kitchen experience is required, preferably in both restaurant and catering/prepared foods. Purchasing experience, strong cost control skills, and attention to detail are required.

Job Responsibilities

  • Overseeing quality of all made-to-order and prepared foods and controlling food waste.
  • Ordering of all kitchen ingredients, paper goods, and prepared foods packaging.
  • Managing proper receiving, storage, and rotation of food.
  • Maintaining accurate recipes, order sheets, and prep lists.
  • Keeping accurate allergen lists for front of house staff.
  • Day-to-day management of kitchen staff, including hiring, training, and scheduling.
  • Maintaining food cost and labor goals.
  • Overseeing cleanliness and sanitation procedures, including implementing daily/weekly/monthly sidework schedules.
  • Maintaining compliance with all Georgia of Department of Agriculture regulations, including but not limited to: food labeling, sell by dates, and food storage.
  • Working with owner to utilize excess retail product.
  • Conducting monthly kitchen inventory and periodic audit of recipe costs and menu prices.
  • Ensuring all kitchen equipment and tools are in working order and coordinating with owner when maintenance or replacement is required.

CHEESEMONGER

Responsibilities include:

  • Providing excellent service by offering suggestions and providing education to our customers in a relaxed and unpretentious manner.
  • Monitoring and ensuring the quality and condition of cheeses and charcuterie.
  • Receiving orders and properly rotating product.
  • Building cheese plates and platters.
  • Maintaining sanitation and cleanliness of work areas, which includes but is not limited to sweeping, mopping, washing dishes, and cleaning display cases.
  • Working with owner and kitchen manager to make use of excess products.
  • Light food preparation (stuffing olives and peppers, making dips and spreads).
  • Assisting kitchen staff in packing food orders during rush periods or as needed.
  • Communicating with management and coworkers regarding customer needs and product availability.

Job requirements:

  • This is first and foremost a customer facing position. Customer interactions often last longer than in your typical retail job and a great deal of patience and the ability to multitask is required. Our goal is to encourage repeat business by building relationships with our customers.
  • Experience working in artisan cheese and charcuterie is preferred. A passion for food and an interest in the history, heritage, and production of cheese and charcuterie is required.
  • Some professional kitchen experience preferred. Basic kitchen skills and a comfort using knives, slicers, and other kitchen required. A ServSafe certification is encouraged.
  • Basic math skills, mostly involving weights and measures, required.
  • Ability to stand for extended periods, walk, bend, talk, hear, listen, reach, grasp, taste, smell, perform repetitive motions and use hands to handle or feel objects.
  • Ability to push, pull, lift, carry, or otherwise move 10 - 25 lbs. regularly and up to 70 lbs. occasionally.
