Matthews Winery Blackboard Red: A Bordeaux-inspired blend from Washington State. Cab Sauv, Merlot, and Cab Franc farmed using sustainable practices. Hand-harvested and sorted, stainless steel and concrete fermentation, and cellered for 18 months on French oak. Rich, with aromas of boysenberry, lavender, and tobacco.
Cascadia Creamery Glacier Blue: Raw, organic cow milk cheese from Oregon. A relatively mild blue with a crumbly texture that melts like butter in your mouth. Cascadia's cheeses are matured in their special aging room built underground inside a natural lava tube. Lava tube, I say!
American Spoon Damson Plum Preserves: Up at the tip of Michigan's ring finger, this family-owned operation has been crafting small batch preserves in copper kettles for thirty some years. Damson plums, which are way too sour and bitter to eat out of hand, transform into something magical when cooked down and sweetened.
The pairing: The combo of the cheese and wine brings out intense aromas of baking spice, while the addition of the plum preserves smooths out the oakiness of the wine.
